roberto 7efaeba283 chore: migrate Settings to Pydantic v2 ConfigDict ...

Replace deprecated Pydantic v1 `class Config:` inner class with
`model_config = SettingsConfigDict(...)` to eliminate the deprecation
warning emitted on every test run.
